The estate is as traditional (confiscated from the Carthusian monks during the Revolution and sold as 'national property' to the Pignier family in 1794) as it is avant-garde (biodynamic cultivation since 1998, Demeter certification since 2003). The vineyard (14 hectares in the commune of Montaigu) stretches over clay, limestone and marl soils, planted with red grape varieties (mainly Trousseau and a little Poulsard) on the southern exposures, and white grape varieties (Chardonnay and Gamay Blanc) on the north/north-east exposures. The entire range is a perfect expression of the purity, spontaneity and authenticity that are the hallmarks of Jura wines. Rated two stars in the Revue du Vin de France's 2024 guide.
This Sauvageon, a pure Savagnin, is fermented and matured in ovoid concrete vats, with regular topping up for more fruit and freshness.
Nicolas Greinacher (Vinous - August 2024) : 91/100 « Fermented and matured for one year in concrete eggs, the 2022 Blanc Côtes du Jura Sauvageon checks in at 14% alcohol. Lemon flesh, yellow apple, honeysuckle and wet stone are all pushed forward. Medium- to full-bodied and generous, the 2022 engages the palate with solid flavor concentration and closes with a juicy finish. This is a muscular Savagnin with plenty of substance. »

The Savagnin sous voile is matured in barrels for 60 months, without topping up, to develop the nutty, rancio aromas typical of Jura yellow wines.
Nicolas Greinacher (Vinous - August 2024) : 93/100 "The 2018 Savagnin Côtes du Jura Sous Voile aged oxidatively for five years and clocks in at 15% alcohol. A gentle swirl of the glass unlocks finely delineated saffron, walnuts, dusty lemon peel, hay and bruised apple. On the palate, the 2018 displays remarkable elegance and sees the elevated alcohol flawlessly integrated. Complex and round, this is a tasty Savagnin with class and finesse."

Les Gauthières is the estate's great red cuvée (focusing on black cherry in 2022), selected from a plot planted as in the past with trousseau à la dame, trousseau noir, enfariné and savagnin jaune, matured for 12 months in barrels.
Nicolas Greinacher (Vinous - August 2024) : 94/100 "The 2022 Trousseau Côtes du Jura Les Gauthières hails from the lieu dit of the same name. It leaps from the glass with pronounced aromas of licorice, loamy earth, crushed violets and red and black plum. Touching the palate with elevated flavor concentration and remarkable intensity, the 2022 brings it home with tension on the savory finish–a real triumph."
