Even if they have exceptional ageing potential, we recommend tasting Sauternes from their earliest youth.

Until August 2012, only the cultivation of grapes was certified organic (free of synthetic products) after a 3-year conversion period. Since then, from the 2012 vintage onwards, the sulphur dioxide content of wines has also been monitored in order to obtain the European label Vin bio certifié.
Only wines that are certified organic and display the European label on their labels are marked as such on our website.

Other labels exist (Demeter, Biodyvin, Nature et Progrès...). These have more demanding specifications than organic farming but are not recognised by public agencies.

    Family estate of the late Bernard Gavoty, alias Clarendon, great music critic of the 60s. Its spearhead, the Clarendon cuvée, is one of the greatest whites of Provence, 100% rolle grape variety that he was the first to plant in Provence. Quoted in the Revue du Vin de France's guide, with the comment "the Clarendon vintage is the symbol of what a great Provencal white wine can be".

    Clarendon white, pure rolle (= vermentino or Corsican malvoisie), matured without wood to stay as close as possible to the freshness and brightness of the fruit (pear, pineapple, aniseed...). This white wine has an ample and fat structure which allows it to age admirably for 10 years and more, with noble bitters (petroleum nuances).

    An iconic and historic Bandol estate, in the hands of the Tempier family for nearly 2 centuries. It was Lucien Peyraud, husband of Lucie Tempier, who, from 1945 onwards and as President of Bandol wines, fought to impose Mourvèdre (minimum 50%) in the appellation. Despite their natural concentration and power, the estate's reds are distinguished, refined and harmonious, with an ageing potential worthy of the greatest Rhône wines.

    Light ruby in color, airy and delicate on the palate, superlative freshness, silky tannins: all the magic of high-altitude sciaccarellu (with a few vines of old autochthonous varieties) is expressed in the Ministre Impérial cuvée, grown on granite soil and picked at optimum ripeness, with an almost Burgundian profile. A great wine!

    Flag bearer of the new Spanish viticulture, Alvaro Palacios has built its reputation with its Priorat wines, including the flagship Ermita. In 2000, he returned to take care of the family property located east of the Rioja appellation. Over 100 hectares, the vineyard has been divided equally between grenache and tempranillo in organic conversion since 2015.

    Propiedad, a high-end cuvée produced only in the great vintages (if not folded in La Montesa): the oldest vines (40 to 90 years old), long vatting, 14 months' maturation, without filtration before bottling, rated 92/100 by Vinous in 2015.

    Vinous (J. Hidalgo - December 2023): 94/100 “The 2021 Propiedad is a blend of 90% Garnacha and 10% other red varieties, sourced from the Monte Yerga vineyards in Alfaro, Rioja Oriental. Fermented with 55% whole clusters, it aged for ten months in foudres to maintain its purity and proximity to the fruit. This ruby-red wine features a reductive nose with notes of sour cherry, elder and grapefruit, along with herbal undertones that create a dynamic interplay. On thee palate, it is dry, lean and cleansing, lingering with a chalky, compact texture. This infusion-like red boasts an intense and vibrant mouthfeel, rich in nuance.”

    Altrovino, 50% Cabernet Franc and 50% Merlot, matured in vats. Black fruit oriented, a luxurious and extroverted wine.

    Marco de Grazia is passionate about the vineyards on the slopes of Mount Etna, which he calls "Mediterranean Burgundy". Nowhere else is there such geological diversity, the subsoil being a yarrow made up of innumerable lava flows, each with its own mineral composition. Moreover, because of the altitude, the grapes benefit from a slow and progressive "northern" maturity, combining fruitiness, freshness, richness and power.

    In 2002, he created the Domain of Terre Nere in the northeast of Etna, between 600 m and 1000 m altitude, organically cultivated and planted with old vines more than 50 years old: carricante for the whites and nerello (mascalese and cappuccio) for the reds. The analogy with Burgundy continues as Mr. de Grazia harvests, vinifies and bottles each parcel separately like a Burgundian climate.

    Calderara Sottana white, 100% carricante aged from 15 to 60 years, is a lively, mineral and fat wine, with aromas of grapefruit, orange blossom and aniseed. Classified by Mr. de Grazia as a Premier Cru, an absolutely remarkable white proving once again that the Mediterranean islands, whether French, Italian or Greek, are ideal for making some of the best dry whites in the world.
